Enjoying a lazy Saturday afternoon?!! Make it special by cooking some delicious grilled chicken for lunch, accompanied by a fresh salad and enjoy it with a chilled glass of wine.
Grilled Chicken cordon blue
4 skinless, boneless chicken breasts(thick ones)
1/2 teaspoon salt
1/2 teaspoon pepperChili Sauce
1-2 slices swiss cheese
4 slices ham(turkey ham)
some olive/canola oil
1/2 teaspoon dried thyme or mixed herbs and seasoning of your choice
Cut a pocket in the side of each chicken breast. Season inside and out with salt and pepper,seasoning and chili sauce ( inside each pocket too).Fill pockets with equal amounts of ham and cheese. Stitch pockets tightly closed using toothpicks. Either roll the breast or leave as it is and chill for a couple of hours. If desired pan fry the breasts or grill till juices run clear.
Serve with warm bread and salad for a complete meal.
