Fruit and cinnamon chocolate covered balls with strawberry coulis

Here is a divine dessert recipe that will impress everyone off their feet.

 

FOR THE FRUIT BALLS

Ingredients

  1. Fresh seasonal fruit about 500gms
  2. A small glass of orange juice
  3. A small stick of cinnamon
  4. A clove
  5. Sugar or sugar free about 2 tea spoons (more if the fruit you are using is sour)
  6. Rolled oats about 4-5 table spoons
  7. Dark chocolate bar

METHOD

Put the orange juice in a pan and bring to boil adding all the ingredients. Boil for just a few minutes till the fruit is soft. Take care not to take too much orange juice or the fruit will be too mushy. Strain the fruit if you feel there is too much liquid. Once the fruit cools down mash it well. Add the rolled oats and shape into balls. Melt the dark chocolate and dip these balls into it and let them set in the freezer for sometime till firm and store in the fridge.

FOR STRAWBERRY COULIS

Ingredients

  1. 2 tbsp water
  2. 1 heaped tbsp caster sugar
  3. 300g strawberries
  4. 1 tsp vanilla paste

METHOD

Bring the water and caster sugar to the boil, stirring to dissolve the sugar.
Add the strawberries and vanilla (if using) and cook for just a few minutes until soft.
Purée the mixture until smooth.

TO ASSEMBLE

Pour the coulis in a shot or mini martini glass. Put one( or two if desired) balls in a small skewer and serve as shown in the pic!!
