Healthy food does not have to be boring or tasteless. These Thai skewers are bursting with flavour and are absolutely delicious and completely guilt free.

Thai vegetable Skewers Recipe

Ingredients

  1. Mushrooms 500 gms
  2. Broccoli florets 500gms
  3. Tofu or panner 500 gms
  4. Bell peppers 500gms
  5. zuccini 500gms
  6. Orange juice 2 glasses
  7. Thai red curry paste 2 tbsp
  8. Lemon grass 1 stalk
  9. Kafir lime leaves
  10. salt and pepper to taste
  11. Galangal a small piece

Method

Cut the lemon grass and galangal into small pieces. Place these with the lime leaves, red curry paste  and fresh parsley and muddle them well.  Add this to the orange juice and put it in a big bowl and stir well. Prep the veggies and cut them into equal bite size pieces and then add them to the orange juice marinade. Cover with cling film and leave it for a couple of hours at least. Now grill the vegetables for a few minutes till done. Take care not to overcook as the skewers should have a bite and not be soggy. Once done put them in small skewers.  Reduce the left over marinade to a thick yummy sauce and drizzle this over the skewers. Enjoy hot.
